I’ve been a bit nostalgic lately – maybe looking for comfort during my recent COVID bout, and in general. Randomly, horseshoes popped into my mind. Not the kind you throw or that a horse wears but comfort food my parents made as a kid.
Toasted bread and a burger with fries wrapped around in the shape of a horseshoe with tons of cheese melted over. Yum! My modern interpretation as an adult? Gluten-free bread, an impossible burger, vegan cheddar cheese and zucchini chips with ranch.
Family food memories always bring me comfort and looking back now they feel like important traditions.
