National Grilled Cheese Day is April 12, and what better way to celebrate than with a warm, ooey-gooey sandwich from a local Atlanta eatery. While the traditional grilled cheese might be the only way to go for some, there are several delicious variations worth trying:

• Cooks & Soldiers — Order the Bikini for a white cheddar grilled cheese on white bread, topped with jamón ibérico and black truffle.

• Folk Art — This five-cheese delight is crafted with cheddar, provolone, gruyere, swiss and brie on white toast.

• Iron Hill Brewery — This sourdough sammie is made with fig jam, bacon, Monterey Jack and goat cheese.
